One of our family’s favorite summer foods is fresh corn on the cob. Once we start seeing fresh corn in the markets we buy it weekly. Well, sometimes we buy too much at a time, especially if there is a deal like 8 for $2.

It is inevitable that we will have leftover corn on the cob and honestly, I never knew what to use it for and usually ended up throwing it away. Don’t throw away those cooked or uncooked ears of corn, keep reading for some great uses for leftover corn on the cob.

Uses for Leftover Corn on the Cob

Corn Salsa:

Leftover corn can be a key ingredient in a vibrant and flavorful corn salsa. Combine the corn with diced tomatoes, red onions, jalapeños, cilantro, lime juice, and a pinch of salt. This salsa pairs well with tortilla chips, as a topping for tacos, or as a side for grilled meats and fish.

We made a black bean salad with Corn we cut off the cob and kept in the fridge until we were ready to make this. The prepared salad can sit in the fridge for a few days too.

HOW TO STORE LEFTOVER COOKED CORN ON THE COB FOR LATER USE:

If you have leftover cooked corn and want to save it for later use, here’s how you can store it properly:

  1. Cool the corn: Allow the cooked corn to cool down completely at room temperature before storing it. This helps prevent the growth of bacteria.
  2. Remove from the cob (optional): If the corn is still on the cob, you can remove the kernels by using a sharp knife. Hold the cob vertically and carefully cut down the length of the cob to remove the kernels.
  3. Choose a storage container: Select an airtight container or a resealable plastic bag that is suitable for storing food. Make sure it is clean and dry.
  4. Portion and pack: If you plan to use the corn in smaller portions, divide it into meal-sized portions before storing. This makes it easier to thaw or use the required amount later without having to defrost the entire batch.
  5. Seal the container: Place the cooked corn into the chosen container, seal it tightly, and make sure there are no air pockets inside. If using a plastic bag, squeeze out any excess air before sealing it.
  6. Label and date: Write the date on the container or bag so you can keep track of its freshness. This is particularly helpful if you have multiple containers of leftover corn in the freezer.

CAN I FREEZE COOKED CORN

Freezing the corn: Cut off the kernels and place in a freezer Ziploc Bag. If the corn is not cooled, allow the kernels to cool in the fridge overnight and package, about 2 -3 cups per bag, in bags for the freezer.

Place the container or bag of cooked corn in the freezer. Ensure that it is placed in a flat position so that it freezes evenly and takes up less space. If using a plastic bag, you can lay it flat and stack multiple bags on top of each other.

HOW TO THAW AND USE COOKED CORN

When you’re ready to use the frozen cooked corn, remove the desired portion from the freezer and thaw it in the refrigerator overnight.

Alternatively, you can add the frozen corn directly to soups, stews, or other hot dishes during cooking.

Can you freeze corn on the cob without cooking it first?

While it might sound easier to freeze uncooked corn on the cob,it’s not recommended. The process of boiling and blanching the corn first is the absolute best way to prepare your corn for the freezer.
