OK, I’m talking about SALSA, What did you think?

Something I’m very known for is my salsa. I went to a mini salsa making class over 20 years ago and I have taken that recipe and added my own special touch and a few changes and have been making it ever since. In fact I don’t ever buy salsa. My bffhubby says there isn’t any salsa out there that is better.This recipe has seen its share of catered events.I have made it in massive proportions for weddings, events, parties, holiday gifts, etc… I have taught a couple of classes on salsa making also. You are not going to believe all of this when you hear how easy it is to make and the simple ingredients used. The problem I have in sharing it is that I really don’t use a recipe, and when I do make it, many times it is by the gallons! I have had so many people ask for it though that I’d thought I’d share it on the blog today with these cute printable tags so you can gift it for Valentines day.

I’ll do my best to share the recipe to make it as I do but I must add that making salsa is something you must taste along the way and add more ingredients or seasonings to get the taste that is just right for you. I never knew such a simple recipe could be so tricky at the same time. This recipe seems to be pretty tried and true though, so here it goes!

First I want to share some salsa 411. Most of these are strictly my opinion 😉

1. Salsas are generally made from canned tomatoes. You need to find the ones that meet your preferences. My first preference is First Street salsa style petite diced tomatoes from Smart & Final. It is no longer convenient to get those for me anymore so I go for other brands. I prefer a can of peeled crushed tomatoes and a can of the petite diced though. Tomatillos are harder to find… so get what is available!

2. Fresh cilantro is a must in salsa! Trim away most of the stems. A few small stems don’t hurt.

3. Most great salsas will have fresh lime juice and a tad of sugar in it!

4. I am not as particular about the jalapeños in my salsa. I started out always roasting fresh jalapeños. Now I use jarred jalapeño slices and they work fine. They also are a little easier to have consistency with the heat ratio and they are just plain easy which of course I like!

  • RED SALSA:
  • 2 26 oz can petite diced tomatoes
  • 1 cups bunch cilantro (remove stems-so its mostly leaves. Some stem is fine)
  • 1 4-5 oz can diced green chiles
  • 1/4-1/2 cup jalapeño slices Add more for hotter salsa.
  • 1/2 cup thinly sliced green onion
  • 1/2 to 1 lime depending on how juicy it is. Start with half.
  • 1/4 tsp onion salt
  • 1/2 tsp garlic salt or fresh garlic
  • 1 Tbs sugar
  • salt to taste
  • (extra canned tomatoes (lime, and jalapeños on hand if needed to balance heat and flavor))
  • …………………………………………………………………………
  • GREEN SALSA:
  • 2 26 oz cans of tomatillos Pureed would be best if you can find it!
  • 1/4-1/2 cup jalapeño slices Add more for hotter salsa.
  • 1 cups bunch cilantro {remove stems (1-2 of mostly leaves. Some stem is fine})
  • 1/2-1 cup of sugar
  • 1/2 tsp garlic salt
  • 1/4 tsp onion salt
  • 1/2 to 1 lime depending on how juicy it is. Start with half.
  • 1 4-5 oz can of green chiles
  1. (pre-prep) Wash cilantro well and cover with paper towels in fridge to give it a bit of a dry and firm texture. This can be done before or after chopping off stems. Thinly slice green onions. Gather other ingredients and open cans,

  2. You will need a blender and a glass or stainless steel bowl to prepare
  3. In a blender combine jalapeños and 1/2 of the first can of tomatoes. Blend on high until it is a thin liquid consistency and jalapeños are completely blended in. Pour into a glass or stainless steel bowl.

  4. Blend the onion and garlic salts with the 2nd half of the can of tomatoes to get a salsa style consistency. Combine in the bowl with jalapeño mixture.

  5. Combine 1/2 can diced tomatoes and cilantro in blender and mildly chop until cilantro is in very small pieces. This wont take much. Add to bowl of previous mixtures.

  6. Remaining tomatoes can be lightly chopped in blender or added to salsa directly if you like a few small chunks.
  7. Add remaining ingredients (green chiles, green onion, sugar, lime, seasoning). Stir all ingredients together very well!
  8. This is where you taste test… Need more jalapeño? repeat step 1. If necessary add more seasonings, or add more tomato if it’s too hot or powerful.
  9. Thats it. You have control over this wonderful concoction!
  10. GREEN SALSA: Use same method as with the red salsa! If not using pureed tomatillos, drain some of the liquid from the tomatillos before blending, leaving about 1/2 cup liquid. Also be sure to have extra tomatillo on hand. Some tomatillos carry more liquid, less tomatoes and you will want to drain most of the liquid. Blend to desired consistency. Mix together really well and season to taste. Some tomatillo is really bland and may need more sugar and lime.

The green salsa is made very similar to the red. People love this salsa, maybe even better than the red. I think the secret must be in the “sugar”!

Double bonus is that it would also make an awesome super bowl snack. So you can’t go wrong with the timing of this hot delicious goodness!
